- Use 1100 g fresh chicken cut into 6 - 8 pieces
- Use 2 bulbs of garlic - peeled
- Get 1 1/2 inch ginger
- Provide 8 green chillies
- Get 1/2 tsp whole black pepper
- You need Handful coriander leaves - chopped
- Get as required Mint leaves
- Provide 2 tbsp hung curd
- Use 2 tsp cumin seeds

- Make deep gashes in the chicken and set it aside. Grind the ginger, garlic, green chillies, coriander leaves, cumin seeds, pepper, mint leaves to get a smooth paste without adding water. Squeeze in the lemon juice and grind again. The marinade is ready.
- Coat the chicken well with this marinade. Add turmeric powder, salt as required, yoghurt and mix well. Rub the marinade to the gashes too. Refrigerate this for 6 hrs.
- Before frying add some melted butter to the chicken & mix well. If frying in an airfryer, preheat the fryer for 5 min at 200degrees. Brush a layer of butter on the fryer mesh & place the chicken without overcrowding. Set the fryer for 180 degrees for 30 min. After the first 15 min flip the chicken pieces & fry again. Towards the end of 30 min set the fryer at 200 degrees for 5 mins & fry again. This step is crucial for the chicken to be fried well. Remove the chicken from the fryer.
- If frying in a tawa, smear the tawa with butter & oil. Place the marinated chicken and fry for 10 min under medium flame. Simmer the flame and fry it for another 5 min. Flip it over, brush some butter and cook the other side in the same manner for another 15 min. When the chicken is cooked remove it from the tawa.
- To give a smoky flavour, place all the fried chicken pieces in a heavy bottom pan. Keep a small steel cup inside. Take a piece of coal, heat it till red over the flame. Carefully place the heated coal in the steel cup…add a spoon of oil or butter on it & immediately cover the lid. Let the smoky flavour blend with the chicken for about 10 mins.
