- Use 1 thick chicken breast, cut in half
- Prepare 1/8 cup dried breadcrumbs
- Use 1/8 cup grated parmesan
- Get Salt to taste

- Get 1/4 tsp mixed dried herbs
- Use 1 small egg, beaten
- Prepare Cooking spray
- Use 2 tbsp grated mozzarella

Instructions to make Air-Fried Chicken Parmesan:
- Mix together the breadcrumbs, parmasan cheese, mixed herbs, salt and pepper in a bowl. Set aside.
- Using a meat tenderiser flatten the chicken pieces.
- Preheat air fryer to 190c for 3 minutes.
- In the meantime dip the chicken in the egg then coat on all sides with the breadcrumb mixture. Spray both sides with cooking spray. Air-fry for 7 minutes, turning once. Note that times may varying.
- Top each chicken piece with 1-2 teaspoons of marinara sauce then sprinkle with cheese. Air-fry for further 3 minutes or until cheese has melted.
- Serve immediately with pasta or salad.
Prepare the breading station: flour in one shallow dish, melt butter in a bowl and breadcrumbs with Parmesan cheese in another dish. Dip each chicken piece in flour, then butter, then breadcrumbs.
