Sheet Pan Thai Peanut Chicken with Onions & Peppers Tender, bite sized pieces of white meat chicken coated in a silky, savory, subtly sweet, umami packed Thai peanut based marinade and roasted with tender crisp, sweet peppers and mild onions. Chicken and vegetables in spicy peanut sauce is one of my favorite things to order at restaurants — especially because it makes such great leftovers for lunch the next day. This easy sheet pan recipe combines all that spicy, salty, nutty flavor I love so much into a lightning-fast weeknight meal. In a food processor blitz together the peanuts, Hoisin, rice wine vinegar and a pinch of salt. Place chicken in a bowl and rub this marinade all over.
