  1. Take 1 red onion
  2. You need 2 cloves garlic
  3. Use 250 g mixed mushrooms
  4. Use 2 tsp Dijon mustard
  5. Get 2 tbsp creme fraiche
  6. You need 2 tsp oregano (I did 1 of dried and 1 of fresh)
  7. Take 2 medium chicken breasts cut into strips / bite sized pieces
  8. Get 2 large handfuls of spinach
  9. Provide 1 tbsp olive oil
  10. Use Seasoning

  1. Slice the onion and mushrooms (chunky as they’ll shrink) and crush the garlic.
  2. Head 1 tbsp olive oil in a pan over a medium heat and add the onion and garlic. Cook until soft. Then add the chicken and cook for 3 minutes. Add the mushrooms and oregano and cook for another 2 minutes.
  3. Add the Dijon mustard, creme fraiche and seasoning. Stir until you’ve got a nice combined sauce and cook for another minute.
  4. Put your rice onto cook (I cheated and used a wholegrain microwave rice pouch) but normally I would cook it fresh.
  5. Returning to your chicken mixture, add your green veg and cook for another 1-2 minutes.
  6. Remove from the heat and serve with rice.

Split chicken: Cut chicken in half horizontally to give two thin steaks per breast so you have four steaks in total.
